Monday's dinner and bills

Monday is a rather hectic day for me. I choose to go to Walmart on Mondays because it's less crowded and I don't have to deal with people's nasty attitudes; you know the hustle and bustle of life in New Jersey. Also, must of the faculty or departmental meetings are also held on Mondays. By the end of the day, I'm just exhausted and just want to veg out in the couch and it compromises my desire to make dinner. In anticipation to the Monday blues, I prepare a good portion of our Monday meal on Sunday. Tomorrow we will have meatballs over pasta.

On the financial front, things are the same. I'll have to pay a heating oil bill of almost $1300. Our property taxes are also due May 1st (quarterly $2200). Needless to say, these bills will put a damper on adding to our savings this pay period. Oh, well!

    DH and I made a huge batch of shredded beef burritos today. Sent most home with SIL, but kept enough for tomorrow's dinner. Great minds think alike!

    Zowie! That $1300 would buy us about 9.5 months of winter heating (nat gas). So glad I live where winters are fairly moderate and fuel not too pricey right now.

    Joan.of.the.Arch, I wish! Our heating bill is about $3300 a year and property taxes well over $8K. Too expensive to live around here. Luckily, our income is close to $100K. Otherwise, we'd have have to move out of this state.

    Homebody, can you give me your recipe for the shredded beef burritos?
