Fifty-two Week Savings Challenge...

begins today, but I am actually starting with week 52 and so on. The money will be used to cover some of the expenses for our 25th Wedding Anniversary in February.

Sweet and Sour Pork Chops Recipe

I buy one of those hunk of pork loin Trift-o-rama won to prepare this meal.

I cut the pork chops semi-thin, but you can slice them to your desired thickness. Browned the pork chops in olive oil, then add a can of condensed tomato soup, 3/4 cup of brown sugar (or less), one tablespoon of white vinegar, two tablespoons of Worcestershire sauce and one teaspoon of Italian seasoning. Mix and let it cook on low heat for 20 minutes and serve over a bed of white rice.

On a mission...

to become debt free (once more) in 18 months on one income. After we paid off our mortgage, I decided that I deserved to have the car of my dreams. I take all of the blame for the debt; my hubby was not thrilled on accruing debt especially since he is out of work. We have $38K to pay off and my only solace is that "she" (my new car)is quite the beauty.

Disclaimer: The car cost us $38K including tags, taxes and additional insurance but my son bought my 2011 Toyota for $15K and has faithfully made payments on it every month. The debt repayment begins in January.

Met another goal!

We finally hit the $40K savings goal. No job for my hubby yet, but I am certain we can manage with just my income. I'd been putting all of his unemployment benefits checks into the savings. Savings will be accrued little by little from this point forward but I feel relieved that by February we will have another $5K to remove the inground oil tank and replace it with an above ground tank. I hope that by June, we will have the money to repair the front porch decking. My hubby said something to me the other day that broke my heart. He said that he felt like he was not worthy of eating the food that he eats because he is not contributing to the household. I had a long talk with him about his feeling and I think I made him feel better. Frown
