Monday's dinner and bills

April 25th, 2010 at 03:58 pm

Monday is a rather hectic day for me. I choose to go to Walmart on Mondays because it's less crowded and I don't have to deal with people's nasty attitudes; you know the hustle and bustle of life in New Jersey. Also, must of the faculty or departmental meetings are also held on Mondays. By the end of the day, I'm just exhausted and just want to veg out in the couch and it compromises my desire to make dinner. In anticipation to the Monday blues, I prepare a good portion of our Monday meal on Sunday. Tomorrow we will have meatballs over pasta.

I use a recipe I found online and we just absolutely love it. http://southernfood.about.com/od/meatballs/r/blbb628.htm

On the financial front, things are the same. I'll have to pay a heating oil bill of almost $1300. Our property taxes are also due May 1st (quarterly $2200). Needless to say, these bills will put a damper on adding to our savings this pay period. Oh, well!

I hope you all have a great work week.

What I'd been up to.

Hi friends! I have not posted lately because I've been enjoying reading all your posts. Well as of yesterday, technically, we surpassed the $75K savings goal, but we will have to tap into our savings in the summer (both my husband and I are employed 10 months out of the year). We each have another 4 paychecks left until June 30, which is the end of the school year for the both of us. I'm hoping to be able to save an additional $2,000.00 by then. My goal is to only use $10K in the summer; that is to cover some expenses for home repairs, college tuition for our son, an insurance premium and one graduate course (my last class). Our mortgage will be covered by the proceeds of our rental house. My husband is planning to put in for summer work and I think he'll get it. I will have to put off continuing taking courses next year because our teachers' union agreed to a salary freeze. We also agreed on no tuition reimbursement and pay 1.5% of our health benefits. I have no regrets voting "yes" for the contract ratification. In this economy, we all have to give a little.

I spend $65 on Zumba CDs. I hear is a lot of fun and I really need to get my body moving somehow. I'm also going to follow Weight Watchers point system. I've done it before and I've manage to shed a lot weight doing it. I'm hoping to make some lifestyle changes. On another note, I'm currently on Chapter 3 of my thesis. I'm making progress; I can't wait until I'm done. I'm also doing well using Swagbucks, so far I've earned 11 $5 giftcards from Amazon.

I hope you all have a great and blessed weekend.

It's been a good week

Hello fellow bloggers. I'd been off from work this whole week, but will return on Monday. I managed to spend less than $5 this week. I met up with my friend at a Colombian restaurant and I was so happy with quality of the food and the service. My friend was so generous to pay for the check and told me to take all the leftovers home because it would just go to waste at home (believe there were lots of leftovers). I'll be sure to pay next time we go out. I have to send the check to pay the state of New Jersey before the 15th of this month, but I'm going to try like heck to continue save as I have in the past (as Ramsey says gazelle intense). I already have the ING Direct account on autopilot.

I dedicated some time decluttering the house. I've watched TLC's Hoarders series and quite honestly I'd like to become a minimalist. Today I tackled the laundry room and tomorrow it'll be one of the closet. I already told my son that he has to get rid of some stuff this summer.
