something so out of character for me last night. My brother is getting married next Saturday in Florida and since I had already booked my surprised trip in February I told him that I would not make it. Then my sister calls me and tells me that I would be the only one not there. So I was thinking yesterday at work and I made a comment to my coworkers that I knew I was going to be very blue on Saturday knowing that all of my sibblings and my mom would be together having fun and enjoying each other's company. They told me that I should be there. When I got home, I asked my boys if they wanted to come with me and they said yes. Long story short I booked my weekend trip to Florida last night. I paid an arm and a leg for the airfare, but somehow I don't regret spending the money. Maybe, in my mind, I'm justifying it because we usually get a nice income tax refund. Who knows!

P.S. Hubby will be staying to care for our dog.

2 pounds this week. I'm excited and positive about the changes I'm making to get healthier! I'm prone to having lots of headaches and ever since I've started Weight Watchers, I've only gotten one headache. (knock on wood)

-5.9 lbs this week. Usually the first week I lose a lot of weight. Needless to say, I'm pretty excited!


I also got an unexpected $583 in my paycheck. I'm using the money to get my contacts, my son's reading glasses and college textbooks. Yipee for the wind fall.

A surprised trip

I forgot to tell you that a week ago I booked a trip to Florida to see my Mom and sibblings. The last time I planned a trip, the day after I arrived there (Florida), we received the news that my Dad had passed away of heart failure and my sibblings and I had to travel to the Caribbean to give my father proper burrial. It's terrible that it takes such a life changing experience to realize that I should've made time to see my parents more often. The last time I visited with my Dad was in 2008 and that was our final hug. My mom is now living with my sister so at the end of February I will be surprising them. Got a good deal on the airfare, $225 round trip. God willingly I will be there from February 25th-March 1st. I took 3 personal days from work.

I'm so excited!

Filled up my tank on Saturday @ $2.87 a gallon (Northern NJ). I saw the sign today and it went up to $2.91.

Christmas cards for .69 cents each box. (90% off)

I'm faithfully tracking our grocery and miscellaneous spending using the a spreadsheet (2011 savings tracker). I'm already over budget a little over $13, but it's okay since this spreadsheet will help me set a realistic grocery budget for the following months. I love the spreadsheet because one can input coupon savings. As I mentioned before, any amount saved using coupons will be used to pay down the principal of the mortgage.

Joined Weight Watchers!

I officially joined Weight Watchers on Thursday. A lot weight to lose, but I'm determined to shed the unwanted pounds. I've set a goal of attaining a healthy weight by July 6, which is six months from now. I promised myself that I will get back on the program even if I fall off the wagon and I'm keeping a weight loss journal to jot down my feelings every day. I'll also post any weight loss or gains for those of you who would like to cheer for me. I took advantage of their New Year promotional and paid No registration fee!

Leftover Rice Pudding Recipe (easy and delicious)

So that you know I added about a 1/3 of a cup of heavy cream when the pudding was done, but only because I had the heavy cream on hand.

Leftover Rice Pudding

2 cups leftover cooked white rice
3 cups milk (any kind)*
1/2 cup sugar
small pinch salt
1/2 cup raisins
1 teaspoon vanilla extract
1/2 teaspoon cinnamon, optional
pinch nutmeg, optional

Combine cooked rice, milk, sugar and salt in a medium saucepan. Bring to a boil, then lower the heat to a simmer and stir in the vanilla and raisins. Cook until just about all of the milk is absorbed (30-45 minutes, depending on how absorbent your rice is). Stir in cinnamon and/or nutmeg, if using.
Divide rice pudding into individual serving dishes serve warm or chilled.
Makes 4-6 servings.

*Note: Sometimes I add an extra 1/2 cup of milk, if the rice seems unusually firm or dry, to make it creamier. Feel free to add a bit extra if the pudding is not as creamy as you like it. You can use nonfat, lowfat, whole or soy milk in this recipe.

Rice pudding and a little more

Hello! I'm enjoying myself reading all of your blogs and especially like that we have new bloggers. Good luck to all with your saving goals and debt repayment. As for me, I keep navigating the seas of frugality. I ordered another $25 Amazon gift card using Chase rewards. Once I get it and apply it to my Amazon account, I'll have $330.


So I made sweet and sour pork chops over a bed of white rice, one of our favorite things to have for dinner, and I happened to have about 4 cups left of white rice. Sometimes the white rice goes to waste (you think I would cook less of it), but it dawn on me that I can make rice pudding. I did a quick search and came up with a wonderful recipe. I had all of the ingredients and I'm happy to say that this recipe is a keeper! It was so tasty. Here is a picture:

Last Saturday I also made the butterhorn dinner rolls recipe from Crystal at moneysavingmom.com. The recipe yields 32 rolls and I think that all together I spend $3 to make them. I froze the majority of them and they are super delicious also.


The upstairs tenant was only able to pay $700 of the $965 rent. He is not working, but he told us that he'll have the remainder by Friday. I'm NOT complaining, at least he is making an effort and I hate to have to look for a tenant in the winter. That's life; you have to take the good with the bad. Luckily we don't have a mortgage on this property. I just hope things get better for this family (they have a toddler).
