I'm enjoying my stay in Florida with my family. They are spoiling me with good food and their company. The weather is absolutely gorgeous and I wish the warm temperatures would follow me to NJ. On another note, one of my sibblings gave me a check for my Dad's funeral expenses. I'll add that to savings. I'm schedule to return on Tuesday Frown

Today's cooking yields

This is what my cooking yield today: (thirteen pound turkey and 1 pound of pinto beans)

3 containers of turkey
2 containers of beans
3 containers of turkey rice soup
and not pictured today for dinner we had turkey sandwiches. So yummy!

Proud of son and other stuff

DS#2 shoveled the snow for two ladies who live down the street from us and made $80. He already gave me $40 to put away in the bank for him. I'm so proud of him.


Our income tax returns are done. We are scheduled to receive over $7K from the feds and about $700 from the state. We have decided to add it to our savings once we receive the money. We will have some expenses coming up. DS#2 will be getting his license soon which means that we are helping out with a starter car for him. We also want to redo the laundry room (storage cabinets,new flooring and a new door).


I'll be living to Florida Thursday to visit my Mom and sibblings. I'm so excited! I'm hoping for no snow in New Jersey because otherwise my flight may be delayed.


I'm off from work today and I've been very busy cooking for the week. I even have a whole turkey baking in the oven. Smile

Spring semester

tuition is officially paid in full for my DS#1 son. All $5,186.28 + $186.00 for textbooks. We should get a credit for $155 because we showed proof that he has health insurance. Woo Hoo! So happy! I will continue to put this money away every month even though Fall semester payments will begin in August.

Red Card and updates

I got the Red card from Target. Yesterday alone I saved $5.65.


Our budget is getting extremely tight lately. My husband hasn't been called to do extra trips (he's a school bus driver) in a long time. To make things thighter, the upstairs tenant in our rental house is not paying the full rent. We are giving him another month to see how it goes. We may have to ask him to move. He has a newborn baby and we don't have the heart to tell him to move just yet. If the market was better, I would sell the house and pay off our primary residence.


I created a budget and I'm keeping track of everything to see where we can cut back. My hubby and I would really like to keep the college tuition for DS #1 without touching our savings. I think we can as long as we don't make any unplanned purchases.


Our accountant has to wait until tomorrow to complete our income tax returns. Apparently the forms to get the education credits will not be available until tomorrow.


Did anyone watch Suze Orman and Til Debt Do Us Part last night? I actually watched the shows with my 16 year old, but the deal was that I would have to switch channels back and forth to "LOCK UP".


I'd been cooking the majority of our meals at home using things that I already have at hand. I did have to throw away two bottles of salad dressing and it pain me to do so. Next time, I'll buy smaller bottles.

So while I was in Florida with my boys, I think my husband was a little bored. My son's closet is rather small; there is only room for hanging clothes and barely any room to store his many pairs of sneakers. We had some old curtain rods laying around the house so my husband decided to screw the rods to the weird looking wall in my son's closet. I thought it was ingenious for him to repurpose the curtain rods. Here are some pictures:

My trip to Florida this past weekend was awesome, as I mentioned on a previous blog. I loved being around my family and the weather is just what I long for. It also left me wanting to move there. At first, I was all for leaving my job and start fresh. Then cold feet sets in. We thought that we could move in two years. By then my DS#1 would be done with college and DS#2 would be out of high school and done with auto tech school. We could easily buy a house in FL for under $100K and most likely pay cash for it. I can also take the Praxis to get my teaching certification in Florida (I currently have a New Jersey teaching certification). We would also keep the rental property we have to generate income while we grow roots in FL (about $1,500 net). By then, we would have no debt.

Pros of moving to Florida:

> I can be near my family and help care for my elderly Mom.
> No more SAD, currently kicking my ass(seasonal affective disorder)
> No mortgage


> Leaving well paying jobs
> No health insurance until we secure a job with health benefits.
