We had an awesome time on Christmas day with my hubby's family. We laughed a lot; we played the candy cane game, ate lots of food and the drinkers had lots of Coronas and Coquito (a Caribbean coconut drink made with Bacardi rum). My husband made a great effort this year and got me 2 sets of pajamas that were badly needed and gave me money. It's indeed a great effort for him; he usually sends one of the kids to get me something. He actually bought the pajamas himself. Smile The money will be going back to the savings account for our Spring break annual vacation.

I have this whole week off. I am making inventory of what we have on stock to make a meal plan for January. I am taking the Uber Frugal Month Challenge next month at frugalwoods.com. I also have to send a sympathy card to a friend who lost her father in early December and shred lots of paper junk this week.

    Um, Coquito? Recipe please? And what is the candy cane game?

    ThriftRama, you need lots of candy canes on a table, two players on opposite end of the table with a candy cane in their mouth. Players who can lift the most candy canes in one minute with the one in their mouths wins. There are videos on youtube if you want to see people playing it.

    Coquito (Traditional Christmas Puerto Rican drink)

    1 can of condensed milk
    1 can of evaporated milk
    1 can of coconut cream
    1 can of milk of coconut
    two tablespoons of Gourmet coconut cream (not necessary but I swear it enhances the taste)
    cinammon (not too much)

    Blend it all together for a few minutes. Add 8 ounces of white Bacardi Rum (no substitutions for it changes the taste)and blend again for a few minutes. I'll post a picture of it; any glass container will do to store it. Must be refrigerated! When ready to serve, make sure to shake the bottle well to mix all the ingredients together. Our family version of Coquito tends to be creamier than others and everyone swears that their Coquito is the better one Smile P.S. You can add the rum 4 ounces at a time and taste it. Add more if you think is necessary. The rum should not overpower the Coquito.

    My local supermarket carries all of the ingredients, if not you can check in a ethnic specialty store. Check in the "drink mix" isle at your supermarket or you can also add a scoop of coconut ice cream when you are blending all of the ingredients.
